Here's my shrimp mix for Petros:
From the freezers at Kroger
12oz bag frozen green beans
12oz bag frozen cut leaf spinach
12oz bag frozen peas
12oz bag frozen broccoli
(Gonna also try adding cucumber and kale in the next batch)
From Kemah:
3lb fresh whole gulf shrimp
Other stuff:
3 - 4 heaping tablespoons spirulina powder (from the Vitamin Shoppe)
3 - 4 cloves of garlic, or more if your fish like it
About 70mg of dry agar agar strands (from your local Asian grocery)
About 8 - 10 cups of water to blend everything, about 5 - 6 cups of water for agar agar
Stuff that I add if I have it lying around: left over Ken's flakes, krill dust/fines (has natural color enhancers), NLS, etc.
Basically blend everything but the agar agar together till it's all well combined. I usually run the mix through the blender a couple of times to make sure. Add a little bit of water to the first time you mix and get the final blend to the consistency/runniness of gravy.
Boil 5 - 6 cups of water in another pan and drop in the strands of agar agar into it, stir and boil until they're are no visible strands and all agar agar is completely dissolved.
In the meantime, gently heat the shrimp/veggie blend, stir well.
Then add the the dissolved agar agar into the slightly warm veggie blend, one ladle at a time, and mix thoroughly.
After all the agar agar is mixed really well into the shrimp/veggie blend, pour out the mix onto nonstick cookie trays and spread it out evenly. Refrigerate for an hour or so. The mix should already be starting to gel. Cut lines into the gel that will help you break the sheets once frozen. Freeze overnight. Then break into pieces and store in airtight containers in the freezer for use later.
This recipe is based on what's available online, especially the one for Canadian shrimp mix by Rick Hickman.
