Does anyone pay attention to these parameters? My GH is 179 and my KH is 161 and my PH is 7.8 - 8.0. These numbers seem right at the low mark of what African cichlids like and wanted to know if I should try and raise them with Seachem Cichlid salt or just to leave it alone?

It depends on the fish and how extreme the difference. In Caradina shrimp, some wc cichlids, and tetra its very important while others don't seem to mind at all. Gh and Kh are indicators of hardness or mineral content, like TDS. They help buffer water Ph up and maintain it there. Some folks on here buffer up, but if the fish are fine I would not. Just watch for any issue and know its something to watch and possibly try raising should there be an issue you notice.In the land of the blind, the one-eyed man is king.

Which African cichlids? Malawi? Buffer which comes from kH is very important when considering pH level. Avoiding pH swings are the key. I buffer at water changes using homemade rift lake buffer recipe. While my pH out of the tap is fine at 7.4 it drops significantly over the course of a week or two.
