Dan Johnson has done extensive research on the various crawfish species in the state of Texas and has identified quite a handful of new species he himself identified. He is on the box here and has a biota page of local houstonian species, though his crawfish area is lacking due to it being the focus of his upcoming book. I can try and get you his email address, though try searching and sending him a PM hereIn the land of the blind, the one-eyed man is king.

It's likely Procambarus clarkii. They are often red as adults, but are always brownish as juveniles. They often have large numbers of tiny black spots. Many other species occur in the area, but clarkii dominate in bayous. Cambarus ludovicianus also occur commonly along bayous, but they mostly stay in burrows except for juveniles in the spring. And they are easily recognized.
