Maybe you are correct Tony but i'm just sharing what i have (black background, a lot vals, anubias, wood, sand and 6700k&10000K lights), for me works very well. BTW peppering is normal for a Red discus because of genetics and It's carried in the Pigeon Blood lines.

only the blue diamond can not get peppering, the rest will do.

well close...Its only the ones with pegion blood genes. the lepoard will not and there are several others. I think my white butterflys will not either. I had a black background on my 55 and had no real issue with peppering. I do want to paint the back some time but its a ways off. how will the plants you listed do in pool filter sand and the lighting I have?

i have anubias with low light, Pool filter sand but my anubias have not grown for a long time ( or maybe just a little that i can not see the difference) . mines is 55g, so the heith is just 21", not high like yours, so you may need to add more light...

are you using any of the fert tabs for the roots? How mutch lighting does your 55 gal have? Im just curious this would be my " first real" attemp at plants. I have 80 watts on the 110 at 6500k so not that great lol

looks good. I would paint the background a soft sky blue color. Black is a gamble that I wouldnt want to take. the background will really make the rocks pop out more. Maybe a nice tall driftwood in the center. I did this with mine and the Discus all huddled around it at lights out.

                        update!

Ok here is a little update of the tank. I now am using a twin shoplite with 6000k bulbs and 2 18" antenic behind them. i added a fluval 305 to the 405 so i now have 2 filters running. anyway here are a few updated pics.

Yes I would like to redo the aquascape but is not bad for now. I was realy suprised the way the lighting turned out. In the future it will be mostly driftwood and just a few plants. Im setting up a new reef tank right now thats taking most of my time. Pic's are posted on marsh under pico and nanos.
