Please stick to one Lake/River of water... ie either Malawi, Tanganyika, or Amazonian. I would say with the tank size you are thinking of, take a look at your local sponsors here, City Pets and ask them how much it would be for a tank, or you can look online at places like Glasscages.com. I would prolly go with a local dealer and see what they have to offer. Look at Deep Sea Aquatics, as they will make custom sized tanks too. You want to get something with a heavier setup than AGA, as you dont want the liability of an accidental breakage of the tank in your restaurant.
Fish I would say look at Lake Malawi as they are the least demanding and easiest fish to care for. Maintenance is important too, and I recommend where ever it is you install the tank have perm draining and refill system installed (ie large carbon bottle to fill with) and a water drain underneath the tank so you are not running hose all over the restaurant while its being maintained. You will be able to do water changes easy and quick, the only thing you will need to do is have someone clean the glass and filter maintenance.

3. While discus are undeniably the most beautiful fish out there, their sedate nature would probably seem boring to patrons.

Number 3 is most important to me. Discus may get freaked out by all the movement and if they hide all the time...it's not much to see.
I would go with colorfully malawi was already mentions. I would also go frontosa. They look impressive when big.I ate my fish that died.

Go to glasscages.com and they can custom many tanks out of acrylic or glass.
I also had teneacor, and acrylic world quote me 300 gallon tanks in acrylic.
Tenacor is most expensive, but their work is superb.
I had them all three quote me a 265 gallon, 7ft x 2ft x 30in tall and the price ranged quite a bit.
I would even consider ADG if your looking completely local.
For fishes...there are lots of options. Planted with Tetra's huge schools everywhere, or large cichlid tank such as Fronts, or Central Americans, or bread and butter Malawi types would make a nice display.
There has always been a weakness of mine to do a large central american tank or with Angel fish. It would be nostalgia for me380G For Sale $3000 Acrylic tank & stand
