    Seen something similer before. I feel bad for them. I know it is a traditional dish...but, fish have feelings too...why not at least fresh kill before cooking..

              It's dead, that is just nerves. Just like when someone gets their head cut off and their eyes still blink. This is not traditional dish, if you understand Chinese, the people are grossed out themselves, and I nor any of my family members have tried this dish. I showed the video to my mom and even she was grossed out and found this sick. I think the idea behind this dish was to create a "fresh" dish.

                  I have been to Chinese style restaurants (Hong Kong Style) and we where told about how they do it. Never saw it, but I used to know a cook who offered it up and we asked him to make sure that the head was cooked too because we didnt want to see it. -- its correct.. the nerve endings are what causes the fish to do this. The fish is 100% dead that the cook promised, but because the head is not cooked the fish will at times "breathe" which is natural thing for the fish to do.

                  I personally dont want to see it in real life nor have any wants or desire to see the video -- In the picture I knew exactly what it was.

                        the fish is ALIVE...they just did a special on this on food network where the chefs had to accurately "prepare" the fish so that it didnt die. The rules were simple...must still be ALIVE when served. the fish is sliced so that nothing is damaged that will IMMEDIATELY kill it. Ceaser was kind of right...not dead, but on the way out.
