    im kinda with you Ek. there isnt a lot of raw that i like soo much. dont know how long it has been outa water/ or whether it was frozen (though freezing does kill a lot of bugs and nasties) I prefer the cooked eel, Unagi is my absolute favorite, its been a long time since i tried the other el so maybe i give another shot. and i never eat tuna so thats off my list. i do like spider rolls or tempura rolls, or the dragon roll at a place i go which is unagi/avacado/and tempura if i remmeber correctly. oh and Smoked salmon i love, so philly rolls are good too. every once in a while i will have raw salmon. a place i like to go in china town on bellaire has free miso soup, so thats always a fun place to go.

      i know we are talking about sushi places in houston, but if any of you are in austin, try uchi, the BEST sushi place i have ever been to hands down, its expensive but worth every dollar

        did you know tuna taste way better 2 days after it died?  its almost like beef, freshed killed cow just doesn't taste good as aged beef...

          I ate at Uchi! good stuff...


          As for the aged thing I didn't like it too much...the texture was not to my liking compared to still flapping fresh.


          Oh and My Le is at the Spring Cypress exit.

              so you like that almost crispness, for me i perfer my tuna and salmon frozen (the so called whole-fresh tuna is always frozen whole with not sure if its cyro freeze or liquid nytrogen freeze or are those the same?) to help kill off the germ and whatnots, but for white fish (your snappers and bass and other whatnots)
              i like them alive, or as close to alive as possible, flapping will be supber...  i like my shrimp alive too, or drunken shrimp...

                  Mahoro when did you work at Azuma? I have had a few friends that worked there. Nick Le, Binh, and James all worked at the downtown location
