this might sound stupid but, do shrimp shed?

iv got what looks like the outside of a shrimp on my substrate like the insides have been sucked out if that makes sense

i know its not a dead one as i only have 2 and im looking at them right now

its got the exact same shape and its got legs and what not

Not a stupid question at all.

They do . . . its called molting.

They do it when they are growing. Most shrimp are more sensitive around this time.

the females have a thicker tale. the males have a skinny tale..

They're RCS (Red Cherry Shrimp) if I'm not mistaken? Pretty much the store you got them from has the name down.

The one in the photo has been near the routes of a plant all day and she keeps curling her tail underneath herself, what is she doing?
